Mexican Street Corn Salad

A salad of grilled corn cut from the cob in a light sauce of canola mayonnaise with fresh lime is a refreshing summer tribute to the Mexican street cart classic (aka, street corn).  Garnish with good chili powder and queso cotija. The queso may be substituted with fresh feta or a mild Parmesan.

  1. It looks very yummy. I am imagining what flavors could it be producing. I am sure those ingredients will complement each other well. I am sure that healthy dish is well blended with a healthy drink. Try a jamba juice,jamba juice prices are not too expensive.
