Gigandes Plaki Meze

Gigandes (giant Greek beans) are actually a large version of the familiar green lima bean, but when dried take on the tone and flavors of a mild oversized white bean, much like cannellini. They make a great salad or side dish (meze) stewed in stock with San Marzano tomatoes, fresh greek oregano, garlic and olive oil for approximately two hours after soaking the dried beans initially overnight. Serve drizzled with olive oil and a nice Romano cheese.
