Radish Salsa

The radish is an undervalued garden vegetable with a lot of potential for a sharp flavor, crisp texture and bright color. This radish salsa was the perfect compliment to simple fish tacos (tilapia, in this case). The radishes are grated and soaked in fresh lemon with finely chopped cilantro, salt, pepper and a clove of minced garlic.

A very dear friend of mine makes a salad with very very thin sliced radishes and celery put into a colander and then covered in salt and left to drain for a few hours and then simply put in a bowl with lots of lemon juice as the only dressing. It is absolutely one of our favorite sides at our house. Can't wait to try this with fish tacos what a great idea over the usual shredded cabbage
