Greek Artichokes with Minted Yogurt

Steamed artichokes with a dipping sauce of greek yogurt infused with lemon and chopped mint from the garden make a wonderful (and healthy) appetizer or snack. To steam the artichokes, cut the top one-third off the head and most of the stem as well. Steam or boil in a shallow bath, stem-side up for twenty five minutes.
