Cinco de Mayo: Ribeye Huevos Rancheros

Celebrate Cinco de Mayo, or any other day, with pan-seared and broiled ribeye steak (medium rare and sliced) served on a fried tortilla with a farm fresh egg. Top with fresh salsa, cilantro and chives. Sauce with salsa sauteed and thinned with chicken stock and tomato paste.



This dish relies on very simple ingredients, so make sure all of them are of the best quality available. It takes very little time to prepare, but it can be tricky to time the cooking of its components so that they are not overcooked and don't become cold (unless you have a very large griddle to cook everything at once).
