Fennel & Apple Salad with Lemon Cream

This is a nice spring salad or side dish with a surprising set of flavors. Just toss one head of thinly sliced fennel with one medium sweet apples (fuji or honeycrisp) with the lemon cream dressing. To make the dressing, simply whisk about 1/4 cup heavy cream with the juice of one fresh lemon and some zest, salt and coarse fresh pepper. (It's best to add the cream to the dressing, but the lemon surprisingly causes the cream to thicken, not separate.)
